Watermelon Salsa on fish

I made the best fruit salsa for sauteed white fish.  It was so easy, so healthy, and so delicious.

Fish Salsa

1 cup diced tart mango
1 cup diced watermelon,
A handful of mint chopped,
1/4 cup of diced red onion,
A bit of fresh diced jalepeno and
1-2 tbls of lime juice
2 filet’s of a light white fish (I used sole.)

Mix together.  Let it sit while you cook the fish seasoned with salt, pepper, and paprika. Dish salsa on top of fish and serve.

An excellent easy summer meal for a hot day.
